What A Day
**** I APOLOGIZE, I ACCIDENTALLY ONLY ‘SAVED’ THIS POST LAST NIGHT INSTEAD OF HITTING PUBLISH AND REALIZED IT THIS MORNING AFTER I POSTED BREAKFAST, NOT SURE HOW TO CHANGE THE ORDER OF POSTS SO JUST SCROLL DOWN FOR TUESDAY BREAKFAST! ****
Today was the fastest Monday ever… I was constantly on my feet all day (coordinating an all-day event) to the point where my legs just felt sore by the end of the day, I’ve never had a workday like that! I must say that it didn’t even feel like I was at work today (well I was at another location so…), it was kind of nice! By the way my strawberry-banana oatmeal combo was DELICIOUS… I felt like I was eating a smoothie, but hot hehe (not as gross as it sounds!)…
Lunch was food that was brought in… I had half a turkey hoagie (removed the swiss cheese - ughhh) with a side salad of lettuce, tomatoes, assorted veggies, and some pasta… Mid-pm, I was snacked on a giant ginger cookie (not worth eating) and then a few hershey mini chocolates (also not my faves, I was really craving pb cups!)…
Dinner was brussels sprouts (love this!), sweet potato/apple combo, beets (one of my all time favorite veggies) and a piece of pork marinated in a honey dijon mustard (really yummy)… delish!
I decided to skip the gym tonight because 1.) it’s overly packed on Mondays 2.) I’m exhausted & sore 3.) I have a ton of homework to do for both of my grad classes…
Now I am off to sit in bed & be productive w/ my homework… wish me luck!

Not a swiss cheese fan, huh? The lunch looks fabulous - I adore beets but am always afraid of the ones at school as SO MANY BRANDS use HFCS, ick!
What was the ginger cookie? I love ginger cookies but only if they rock my socks, thus have to keep up on what to avoid.

It is sad how many normal food products have HFCS in it that obviously DON’T NEED IT!!! Ooo the ginger cookies were made by the catering company (local food place), so they weren’t a name brand! I usually like gingersnaps but this just wasn’t up to par!
wow, I can’t believe I’ve never thought to make a pb-banana sandwich like that! I mean, I DO put pb on banana, but I always just use the banana whole, so it tends to roll while I’m spreading the pb on… and then it’s hard to pick up, too. I’m soooo going to steal your cute idea :o).
